Orit's Winning Carrot Cake

At the 2007 CosmoCom HQ picnic we had a CosmoCompetition for best dessert. It was a close contest this year with some outstanding entries. Thanks to all who made their yummy and original specialties. The grand prize went to winner Orit Nahon (Yuval’s wife) for her spectacular Carrot Cake. Here is her “secret recipe”:

Ingredients

• 3 eggs
• 1 cup sugar
• 1 cup oil
• 1 1/2 cups flour
• 1/2 Teaspoon baking Soda
• 1 Teaspoon baking powder
• 1/2 Teaspoon cinnamon
• 1/2 cup raisins
• 1/2 cup walnuts
• 2 cups thinly grated carrots

Preparation

• Whip eggs and sugar. Add oil slowly while whipping.
• Add the flour ,spices, raisins and walnuts. Finally add the grated carrots.
• Heat an oven to 370F. Oil two long English cake baking pans.
• Pour in the batter and bake for 45 minutes.
